There are countless reasons to love summer. Summer recipes take a front seat in my book because of their endless flavors, delightful mixtures, and vibrant colors.
When it comes to cooking this time of year, I like to keep it simple. Time is of the essence, especially when you want to go out and enjoy what’s left of your day. Check out 3 of my favorite recipes to whip up in under 15 minutes. (Who’s got more than 15 minutes to cook anyway?) Let’s dive in.
Avocados for the Win
If you’re like me, an avocado makes its way onto your plate at LEAST once a week. I truly believe it goes with anything. I mean that literally.
Combine your favorite greens (I like to use spinach and arugula), and add in sliced avocados, corn, tomatoes, onions, and your choice of protein. Regulars like chicken, but I’m telling you, sliced hard-boiled eggs really make your taste buds dance. Throw in a touch of olive oil and a squeeze of lime juice. You have yourself an easy dish right under the 15-minute mark. I guarantee you can actually whip this up in no more than 10. Try it.
Protein Packed Sandwiches Really Pack…A Punch
This beautiful masterpiece was discovered in a Weight Watchers magazine I got several months back. The recipe called for an English muffin, turkey meat, egg, cheese, and the secret to heaven—pesto sauce. Sandwich this bad boy up and you my friend have a healthy breakfast on the go. Now this is certainly easy to do in under 15.
If you don’t like fruits, you will now. It’s a medley of joy in a bowl when you artistically arrange your precious fruits and THEN demolish. The beauty of this easy summer recipe is you can tweak, add in, or take out. You don’t need to honor every fruit under the sun, but to cut down on minutes, add your favorites. Try a mix of cantaloupe, watermelon, grapes, strawberries, and pineapple. If you’ve got a citrus craving, summon your oranges! Fruit salads are a force to be reckoned with, and I reckon you eat them this summer.
