For this yummy in your tummy edition, mix together arugula (for that subtle kick), strawberries, a little bit of salt and pepper, (less than a pinch will do) and a few other star players. Here’s your full ingredient list:
- 1 serving of arugula
- 1 cup of fresh strawberries
- 1 cup of sweet corn
- salt and pepper
- vinaigrette of your choice (raspberry is a great option)
- 1/2 a cup of feta cheese
- 1/2 of an avocado (sliced up)
- 1/2 a cup of cooked seasoned chicken
