Not Your Average Macaroni & Cheese Dish
I can’t think of a single soul on this earth with any ill-will toward macaroni and cheese. If you do, I encourage a drastic change of heart. I’ve got the perfect recipe to ease you back into the ‘cheese’.
If you’re a fan of spicy sausage, peppers, and of course MACARONI, this dish is for you! I fell in love with this recipe after checking the mother of all recipe boards—Pinterest. Let’s get started.
- 2 cups of macaroni (I like to use elbow macaroni)
- 1 ½ lbs of spicy sausage
- 1 green bell pepper
- 1 red bell pepper
- 18 oz of marinara
- 18 oz of water
- ¼ cup of half and half (I like to eyeball this measurement for the most part)
- as much mozzarella as your heart desires
For the first step, I usually start off by cooking the meat in a skillet. While that’s cooking, dice up your bell peppers to your liking and set that aside. You can even cut up your mozzarella into little cubes so it’s easier to put over your dish when it’s ready.
Once your meat has browned, drain this off, and add in your macaroni, diced peppers, marinara, and water, and mix together. Be sure to let this boil, then reduce the heat. Allow this to simmer for about 25 minutes. Occasionally stir and check so you can ensure the macaroni is tender.
Next, add the half and half and mix well. Enter the mozzarella! Place your cubes wherever you see fit and allow to melt. (I love this part).
Allow your delectable dish a slight chance to cool (so it’s not scalding hot) and enjoy!
